Grown in the remote highlands by small family farms, this coffee matures slowly in the shade of giant rainforest trees, producing flavorful beans. The cherries are wet milled down to the mucilage, then sun-dried in raised beds, known as the "honey process" or "pulp natural". Often finished off in drying drums fueled by the dried pulp.
